Mercury is contained in a glass thermometer bulb to gauge the temperature of candy syrups and oils during cooking.

The candy thermometer is placed in a standing or hanging position within a pan while cooking. The rectangular metal frame is designed to prevent the thermometer bulb from touching the bottom or sides of the pan during cooking. If this type of candy thermometer slips into the pan the glass containing mercury is protected, although it is still easily broken.
